Karinto (deep-fried cookies coated with raw sugar)

Irresistible, if describe it in one word. To add some more words, crunchy, rich sweetness with a hint of bitterness.

Karinto is a traditional Japanese sweet snack. It’s so popular that you can buy them anywhere in Japan. They say Japanese missions to Tang China brought a similar snack to Japan in the 8th century. The sugar production wasn’t introduced in Japan at that time yet. So, candies using sugar very rare. That’s why the Karinto developed in Kyoto.

As years go by and sugar became easily available, it became a snack for people on the street. Many variations emerged up to areas with different flavors, textures, and extra ingredients. There are many candies with nostalgic appeal in Japan. It is one of the most popular ones among them.

The recipe is simple, so you can cook it at home if it’s not available in your neighborhood.

  1. Put 7oz (200g) of cake flour, half a teaspoon of baking powder, 0.7 (20g) of raw sugar, 0.25 (7g) of white sesame seeds, 2.5 us (70cc) of water, 0.7 us (20cc) of vegetable oil in a bowl.
  2. Knead the dough, and wrap it with cling wrap.
  3. Leave it for 30 minutes.
  4. Roll out the dough to 0.4 (1cm) thick with a rolling pin.
  5. Cut it into pieces of 1.2inch (3cm) x 0.4inch (1cm).
  6. Twist them into a cylindrical shape.
  7. Deep fry them at 320F (160C) until golden brown (about 10 minutes)
  8. Separately, add 4.5 (130g) of raw sugar, 0.5 (15g) of white sugar, half a teaspoon of soy, 0.7 us (20cc) of water in a pot, and heat until boiling.
  9. When bubbles become smaller, add the deep fried pieces (7) into the pot (8) at once, and mix well.
  10. Spread them on a parchment paper to dry.
  11. Ready!
