Chef Yuu Shimano is a co-executive chef in MIFUNE, New York. Before coming to MIFUNE, Chef Yuu studied at Tsuji Culinary Institute. He studied in Osaka, Japan, and Lyon, France.

He is always driven by a desire to travel and his love for France. Chef Yuu worked in Michelin-starred restaurants in the country. First, at a two Michelin-starred La Villa Des Lys in Cannes. It is where he secured his first kitchen position. He also worked at La Villa Augusta St-Paul Trois. He then worked as the Chef de Partie of Meats and Sauces at Guy Savoy. This is an eponymous three Michelin-starred restaurant in Paris.

His culinary foundation is French cuisine. But, as a Japanese chef, he creates modern Japanese Washoku cuisine. Chef Yuu doesn't incorporate traditional Japanese ingredients alone. He always thinks about all the subtleties of how best to use those ingredients. He's always conscious about the dish's flavor, texture, and nose. The different seasons influence Japanese cuisine. Thus, Chef Yuu is mindful of expressing the seasons through his dishes.

Che Yuu is very mindful of the "Omotenashi" spirit when cooking for his customers. Omotenashi means "to serve your guest wholeheartedly and to go above and beyond." He's always looking for the best ingredients to heighten his skill. Also, to best cook that ingredient daily. This way, he can exceed the customer's expectations and go home with gladness.
The global pandemic has affected everyone. But, no pandemic can stop Chef Yuu. He initiated a humanitarian act for the medical frontliners. He cooked food and delivered it to them.
